1. Orange Pound Cake

Ingredients
100g butter
Juice of 2 oranges and grated peel (not the bitter white part)
100g grated almonds
250g flour
9g baking powder
2 egg whites, beaten until foamy
1/2 tsp salt

Method
Mix all ingredients slowly, eggs last, fill mass in buttered baking form, then bake in 375°F preheated oven for 45 min. Add warm orange marmalade on top, let cool and serve.

2. Orange Julius

Ingredients
2/3 cup orange juice frozen concentrate
1/2 cup sugar 
1 cup milk
1 teaspoon Vanilla 
1 cup ice water
12 Ice cubes

Method
Add orange juice frozen concentrate, milk, ice water, sugar, and vanilla to the blender and blend until smooth. Add ice cubes and blend until smooth. Serves 4.

3. Cranberry Orange Ginger Relish

Ingredients
12 ounces Cranberries (1 bag - you can use frozen if necessary)
1 piece Ginger (about a 1 inch cube)
1 medium Orange
1/3 cup Sugar

Method
Cut the orange (without peeling) into about 12 chunky pieces. Peel the ginger and chop it finely. Mix oranges, cranberries and ginger. Process in a food processor in batches. Stir in the sugar. The flavor will invigorate further if allowed to sit for long.  Serves four.

4. Cranberry Orange Bread

Ingredients
2 c. flour
1 c. Quaker oats (uncooked)
1/4 c. sugar or 2 tbsp fructose
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt (optional)
3/4 c. skimmed milk
3/4 c. egg substitute or 3 whole eggs
1/3 c. unsweetened orange juice
1/4 c. vegetable oil
1 tbsp grated orange peel
1/4 c. chopped cranberries, fresh or frozen
1/4 c. chopped nuts (optional)

Method
Grease & flour 9 x 5 loaf pan. Combine the first six ingredients and mix well. Set aside. Beat milk, egg, orange juice, oil and orange peel for a thorough mix. Add to dry ingredients, mixing just till moistened. Stir in cranberries and nuts. Pour into pan. Bake 60-70 min at 350°F till wooden pick comes out clean. Cool for 10 minutes. remove from pan. Cool completely. (You can also bake this as muffins by reducing the baking time accordingly.)

5. Orange Pie

Ingredients
6 tablespoons orange juice
2 tablespoons flour
2 tablespoons grated orange rind
2 tablespoons cornstarch
1½ cups sugar
3 eggs (lightly beaten)
1½ cups boiling water
Pinch of salt
Pie-crust

Method
Line pie plate with pie-crust and bake for 10 minutes at 325-350 degrees, until light brown. Mix flour, cornstarch, sugar and salt together. Add 1/2 cup of cold water and mix well until smooth. Add slowly the eggs and the boiling water. Put on fire and cook, stirring constantly, until thickened (about 3 to 4 minutes). Add orange juice and orange rind. Mix well. Pour in pie-crust and put in slow oven (175-250 degrees) for about 5 minutes, just long enough to have the mixture adhere to the crust.

6. Orange Cream Chips

Ingredients
2 1/4 cups all-purpose flour sifted
1 teaspoon grated orange rind
1/2 teaspoon Salt
6 ounces semi-sweet chocolate chips 
1 cup shortening 
2 cups powdered sugar 
1 cup sugar
3 ounces cream cheese softened
3 ounces cream cheese softened
1 teaspoon orange juice 
2 large eggs
1 teaspoon orange rind grated
2 teaspoon orange juice

Method - Orange Cream Chips

DOUGH
Pre-heat oven to 350°F. Lightly grease cookie sheets. Sift flour and salt onto wax paper. Beat shortening, sugar and cream cheese in a bowl until mixed. Beat in eggs, one at a time. Add juice and rind. Blend in flour mixture. Stir in chocolate. Drop dough by rounded teaspoonfuls two inches apart on prepared sheets. Bake in pre-heated oven for 12 minutes, or until lightly browned around edges. Cool on racks.

Method-ORANGE ICING
Gradually beat sugar into softened cream cheese until well blended. Stir in orange juice and rind. Spread tops with icing. Garnish with thin strips of orange rind.
