Ingredients:
Crust:
1/4 cup Sesame Seed
2 cups flour
1/2 tsp. salt
2/3 cup vegetable shortening
1/4 cup cold water
Filling:
3/4 cup brown sugar
3 Tbs. quick cooking tapioca
3/4 tsp. Ground Ginger
1/2 tsp. Lemon Peel
4 cups peaches, peeled and sliced
2 Tbs. butter or margarine
1/4 tsp. Pure Almond Extract
Method:
Preheat oven to 350ºF.
Place sesame seed in shallow baking pan and toast in preheated 350ºF oven for 15 minutes or until golden brown. Set aside to cool.
Sift flour and salt into medium size bowl. Measure 1/4 cup flour mixture and set aside in small bowl. Cut shortening into remaining flour mixture with pastry blender or two knives until particles are about the size of peas.
Add cold water to 1/4 cup reserved flour mixture and stir to make smooth paste. Sprinkle paste over flour/shortening mixture. Add toasted sesame seed and blend quickly until dough is moist and can be shaped into 2 equal-sized balls.
Set 1 ball of dough aside and roll out the other ball on lightly floured surface to 1/8-inch thickness. Line 9-inch pie plate.
Roll out the remaining ball of dough on floured surface to 1/8-inch thickness and cut into 3/4-inch strips. Set strips aside to use for lattice top.
Increase oven temperature to 425ºF.
To prepare the filling, place sugar, tapioca, ginger, and lemon peel in a small bowl and mix well. Sprinkle half of the mixture over bottom of the pie shell.
Arrange peach slices over sugar-spice mixture and sprinkle the remaining sugar mixture over the peaches. Dot with butter and drizzle almond extract over all. Use pastry strips to form lattice top over fruit. Press ends of the strips of bottom crust to seal.
Bake in preheated 425ºF oven 10 minutes. Reduce oven temperature to 350ºF and bake for 30 minutes.

Ingredients:
1 large can of sliced peaches, with juice.
1 cup of self-raising flour
1 cup of sugar
1 cup of milk
½ cup of margarine
1 teaspoon of vanilla
Method:
In a suitably sized casserole dish, melt the margarine in the oven.
While the marge is melting, mix together the self-raising flour, sugar, milk and vanilla. Stir until smooth.
Remove the casserole from the oven and pour the flour mixture on top of the melted margarine.
Pour the sliced peaches on top of it and put it back in the oven. Bake at 400°F until golden brown.

Ingredients:
2 qts. fresh peach puree
juice of 2 lemons
1 tsp. almond flavoring
1 pt. whipping cream, not whipped
2 1/2 cups sugar
2 cups finely chopped peaches
Method:
Select ripe peaches. Peel (optional), pit and puree. Mix the first four ingredients. Combine peaches and sugar; mix until sugar is dissolved. Combine all ingredients. Pour into an ice-cream freezing can and freeze according to manufacturer's instructions.

Ingredients:
4-6 cups sliced peaches
1 cup self-rising flour
1 cup sugar
1 large egg, beaten
1/2 cup butter or margarine
cinnamon
nutmeg
Method:
Sprinkle sugar, cinnamon and nutmeg on sliced peaches. Toss to mix. Place in a shallow casserole dish. Mix sugar, flour, and egg to a crumb-like texture. Pour over peaches. Melt margarine and drizzle over crumb topping. Bake at 350° for 30 minutes or until the top turns slightly brown and crusty. Serve hot or cold, plain or with ice cream. Serves 6-8.

28 ounces of sliced peaches
1/ 2 cup pineapple juice, chilled
1/4 cup sugar
1 pint vanilla ice cream, softened
Method:
Process the first three ingredients in a blender until smooth, stopping once to scrape down the sides. Add ice cream; process until smooth. Serve.

6 peach halves
1/ 2 cup toasted almonds
8 ounces can red raspberries or 1 pkg. thawed fro/en raspberries or 1 cup sweetened fresh raspberries
1 pint vanilla ice cream
Rum flavoring
3/4 cup water
1 1/2 cup sugar
Method:
Wash and peel fresh peaches. Cook until tender in syrup of water and sugar. If canned peaches are used, place 1 peach half in 6 individual dessert dishes. Stud peach halves with almonds. Spoon raspberries over peaches. Chill. Whip ice cream with electric beater at medium speed or with wooden spoon until it reaches pouring consistency. Blend to flavor and pour over peaches.
