- 1 medium mango, peeled, seeded, chopped
- 2 cleaned deboned chicken breasts
- 6 jumbo pasta shells
- 1/2 Sundia Cantaloupe, seeded, diced
- 1/4 cup of sour cream
- 1 Tbsp. fresh chives, minced
- 2 Tbsp. lime juice
- 1 tsp. Dijon mustard
Season chicken breasts with salt, pepper and seasonings. Grill chicken. When cool, cut into small pieces and Set aside. Cook pasta according to directions. Rinse in cold water and set aside.
Combine diced mango and CANTALOUPE, chicken and rest of ingredients. Add more limejuice to taste. Stuff the shells with this mixture. Beautiful when plated.
