- 16 oz. Low-fat cottage cheese (small or large curd)
- 4 C. Sundia Cantaloupe (or melon balls)
- 1⁄2 C. Toasted coconut flakes
In 4 margarita or martini glasses, layer cottage cheese and cantaloupe, and sprinkle with toasted coconut. It is a great recipe for serving at a luncheon.
Recipe Variations
- For a sweeter option use vanilla yogurt in place of cottage cheese.
- For a cocktail party, drizzle the melon cubes with Limoncello or other fruit liquor.
