- 4 cups Sundia Honeydew melon, diced 1/2" x 1/2"
- 1 cup (about 1 medium) yellow onion, finely diced.
- 1 jalapeno pepper, minced (about 2-4 tbsp.)
- 2 Tbsp fresh ginger root, minced
- 1 cup golden raisins
- 1/2 cup white wine vinegar
- 1/2 cup brown sugar
- 1 whole cinnamon stick
Assemble all ingredients in a medium saucepan. Heat over medium heat, and simmer for 30-45 minutes, until slightly thickened.
Store refrigerated in airtight jars.
Serve with grilled or roasted meats as a condiment, or as a condiment with an Indian meal. It is also great when served with cheeses and breads.
